Curd Rice

Curd rice is a typical South Indian rice variety. As we all know Indian cuisine is more of flavors and masalas. So after having a feast to sooth the stomach it is must to have curd rice. No festival or function is complete without curd rice on their menu. Even for weddings curd rice is must.

Ingredients Required:
Basmati Rice | 1 cup |
Water | 2.5-3 cup |
Thick Curd/ Yoghurt | 1-1½ cup |
Warm milk | ½ -1 cup |
For Seasoning:
Mustard seeds | 1 tsp |
Chana dal | 1 tsp |
Peanuts | 1 Tbsp |
Cashew nuts | 7- 10 |
Green chilies, finely chopped | 1 or 2 |
Ginger, finely chopped | 1 tsp |
Urad dal | 1 tsp |
Hing | pinch |
Oil | 1 Tbsp |
Salt | As needed |
For Vegetable garnishing-(optional):
Carrot, shredded | ¼- ½ cup |
Cucumber, shredded | ¼ cup |
Coriander leaves, chopped | 2 tsp |
For Fruit garnishing-( Optional):
Pomegranate seeds | ¼- ½ cup |
Seedless grapes | 10-15 |
Coriander leaves, chopped | 2 tsp |
Directions
1. Cook the rice with 2.5- 3 cups of water or with 1 cup extra water.
2. After the rice is cooked mash it with the back of a spoon or masher while it's still hot. Add milk and mix well and allow the mixture the cool for 5 minutes.
3. While the mixture is cooling , Heat oil in a pan add mustard, chana dal, peanuts, cashews, urad dal, green chilies, ginger, hing and saute for few a minute in a medium low heat.
4. Then gradually add curd/ yoghurt to the cooled rice mixture and mix until you get the desired consistency or until the mixture just falls off the spoon smoothly.
5. Now add the seasoning and salt to curd rice and mix it well.
6. Just before serving drop in vegetable or fruits and mix them together. Garnish with coriander leaves and serve.
Tips
• Serve cold on a hot sunny day along with any chutney or simply pickle.
• Curd rice tends to become thick as time passes if that’s the case add in some warm milk to bring back the consistency and to reduce the sourness.
• If you are packing it for lunch or making this recipe in advance then add just 1/2 cup of yoghurt to the warm rice mixture, and adjust the consistency by adding extra milk to a little runny like a batter. The curd will automatically set in about 4 hours if you keep the dish in a warm place.
