Puffed Rice Balls(or) Pori Urundai


2-Ingredient decadent snacks/Dessert that your kids will crave for more. Its rich in Iron and Sugarless Sweet bites. One of the best treats for a teething toddler.


Prep time: 5 minutes
Cooking time: 15 minutes
Serves: 12-15 balls
Puffed-Rice-Balls(or)-Pori-Urundai

Pori Urundai/ Puffed rice balls in traditional Indian sweet snack which is prepared during the Diwali seasons. As many Indian sweet its made with jaggery and has loads of iron. Pori urundai/ Puffed rice Balls is a delicious & healthy dessert you can offer for your kids. I have made some fun shapes to get my toddlers interest and to teach her shapes Check the video below for instructions. My toddler is cutting her molars and this works wonderfully for her as a teething biscuit too. If your Kid is anything like mine having sensitive hands, you could stick in a popsicle stick/ toothpick and give them as a lollypop too…

Since these Pori Urundai/ Puffed Rice Balls can be made easily and sweetened only with jaggery its suitable for babies under 1 as teething biscuits. Its easily brittle by those toothless soft mouth and even when bitten it melts in your mouth.

Caution: Check for allergies before you give this to your baby.

In general making these sweet balls seems to be tedious since the syrup consistency is crucial to this. Just recently I tried making it for the 1st time and it was not that difficult too. Just follow the steps and tricks to make and you can master Pori urundai no time.

Ingredients Required:

Pori/ Puffed Rice 2 cups
Jaggery 1/2 cup
Water 1/4 cup
Ginger Powder/ Sukku 1/2 tsp (optional)
Ghee As Required


Directions

1. Heat water, jaggery & ginger powder (optional) in a wide pan and bring it to boil until it dissolves.

2. Once dissolved strain the syrup if needed and reheat it again.

3. Cook the syrup to get desired softball or hard ball consistency.

4. Adding Pori at soft ball consistency gives you a light color, crispy balls. While adding it at the hardball gives you darker color and slightly chewy balls.

5. Word of caution: While adding it at the hardball stage you could end up getting caramelized Puffed rice/Pori rather than balls, Don’t worry check the tips.

6. Meanwhile take water in a small bowl for testing the consistency of the syrup. Check the video for visual sample.


Softball Stage:

1. After cooking the syrup to 5 minutes on medium low flame, pour few drops in the small water bowl. If the syrup settles down and if your able to form balls, this stage is soft ball stage.

2. If the syrup settles and still your not able to make balls then heat it for 1 or 2 minutes and check the consistency after.

Keep a close watch on syrup as consistency is the key for this recipe.


Hardball Stage:

1. After cooking the syrup for 7 minutes on medium low flame, pour few drops in the small water bowl. The syrup will settle down, you will be able to form balls and it would turn hard while your making it, this stage is hard ball stage.

2. If the balls are soft, then heat it for 1 or 2 minutes and check the consistency after. Keep a close watch on syrup as this is the key for this recipe.


7. Once the syrup has reached your desired consistency, Switch off the flame and add in pori/ puffed rice and mix all until well combined.

8. Allow the mixture to cool slightly, While you grease your hands with ghee.

9. Once the mixture is still warm start making tight balls, this must be done as quick as possible.

10. You could make some fun shapes too like hearts and squares to interest your kids. Check the video for instructions.


Tips

1. Syrup consistency is the key for this recipe and once achieved adding the puffed rice making the balls while still warm/ slightly hot is crucial.

2. Making these in small batches like I have made makes it easy.

3. Missed the soft ball stage : If you have crossed to hardball stage while wanting a softball, Just add 1-2 teaspoon for water and cook at a low flame and check the consistency again.

4. Caramelized Puffed Rice/ Pori: If you have crossed hardball stage, Just sprinkle little water and cook on a medium flame quickly. After few minutes the jaggery melts and the mixture comes together. Then start making the balls immediately.

5. Not able to make puffed rice balls: If this happens as you have allowed it cool longer, then reheat on the low flame again until the jaggery melts and the mixture comes together. Then start making the balls immediately.

6. It's better to keep the pori/ puffed rice mixture over the warm stove while making the balls. The warm heat from the switched off stove will help maintain the temperature of the mixture.
