Spring Onion Kootu (or) Dal with Scallions


The creamy dal with sweet spring onion make a good side for the spicy Indian curry. This dish is the twist in the traditional cooking. Can be made in a snap.

Are you bored with same old kootu? Try this one and awe your family. Being south indian we make kootu almost on weekly basis. Kootu is the best side for spicy gravy like kara kuzhambhu.

One day when I was sobbing about my regular meal plan to my co sister, she gave this idea of using spring onions in kootu. She had got the recipe from my MIL. Having a toddler at home cooking must not only be nutritious but also cooked easily. As my co-sis guaranteed its cook time. I went ahead and tried and was very eager to share the recipe at once. Recipe credit goes to my MIL.



Ingredients Required:

Moong dal 1/4 cup
Spring Onion 1 bunch
Garlic cloves 3-6
Turmeric 1tsp
Hing Pinch
Oil 1 tbsp
Dry red Chilies 2-3
Mustard seeds 1 tsp
Cumin seeds 1 tsp
Salt As needed
Coriander leaves Garnishing


Directions

Pressure cooker method:

1. Clean and chop the spring onions to 1 inch pieces.

2. Wash and drain the moong dal.

3. In a pressure cooker add moong dal, spring onion, turmeric , half of garlic cloves and pressure cook until 1 whistle.

4. Take the cooker off the heat and allow the pressure to release naturally.

5. Meanwhile In a small pan/ kadai prepare the tempering.

6. Heat oil in a small pan/ kadai and add mustard, cumin, dry red chilies and all the seeds to pop.

7. Finally add the remaining garlic and saute for few minutes until garlic flavor is infused.

8. After the pressure is released open the cooker lid and mix the tempering to the dal mixture along with salt.

9. Garnish with coriander leaves and serve with spicy gravies / chapatis.


One-Pot Method:

1. Clean and chop the spring onions to 1 inch pieces.

2. Wash and drain the moong dal.

3. Heat oil in a pan add mustard, cumin, dry red chilies and all the seeds to pop.

4. Then add the garlic and saute for few minutes until garlic flavor is infused.

5. Now add the preped spring onions and saute for 4- 5 minutes.

6. Finally add Moong dal with 1.5 cups of water, turmeric, salt to taste.

7. Cook on a medium flame with lid on for about 15- 20 mins or until the dal is cooked and soft. Stirring occasionally.

Garnish with coriander leaves and serve with spicy gravies / chapatis.
