Secret Soft Red Rice Kozhukattai (or)Modak


No sugar toddler and diabetic friendly sweet red rice dumpling snack. Healthy and delicious snack recipe. From toddlers to adults all enjoy it. The secret of a soft modak is revealed.

I am a not a sweet tooth person. Kozhukattai/ Modak are usually made during Ganesh Chaturthi and for aadi koozh in our house. I enjoy the savory dishes on any given occasions. This time when I travelled to India we celebrated aadi koozh with my in-laws. Since this was the first time I was there it was interesting for me to see all from start to finish. I enjoyed koozh, karuvattu kozhambhu and other delicious goodness's on the traditional banana leaf. Thanks to my MIL and Co sisy who made them all.

I was asked to try theirs modak/ kozhukattai which I hesitated to because in my past I have come across the hard and chewy ones that are difficult to swallow. Since it was prasad I happened to try it and to my pleasant surprise I was on my 3 rd serving . Then I wanted to make it for my husband who couldn’t make it to India trip that time. So while returing I brought some red rice flour for trying the recipe.

After trying many recipes from the internet and not satisfied with the outcome. I got the recipe from my MIL and found the secret of these soft cakey modak/kozhukattai was to steam twice. Sounds more work, but definitely worth a try. I made it successfully for my husband and we enjoyed it. My then just 1 yr little one tried these kozhukkattais and she loves it.

Red rice is healthy and this recipe has no sugar so I was a happy mom when she ate those. I know how difficult it is to feed a toddler who is picky about what goes in. Until today she loves these as a snack or breakfast and also likes to help make them too.

Ingredients Required:

Red Rice Flour 1 cup
Palm Jaggery 1/2 cup
Coconut 2 tbsp
Cardamom Powder 1/2 tsp
Salt Pinch
Water 1/2 cup + More


Directions

1. If the Red Rice flour is not roasted. Roast it slightly on a low flame.

2. Transfer it to a bowl and allow the flour to cool a bit.

3. Then add room temperature water in small additions and mix it well. The red rice flour will get more intense color and should feel like a wet sand. It took about 3/4 cup of water for me. This may vary according to humidity level.

4. When you try to make a dumpling it will hold its shape, but will fall apart easily. Check the video for visual sample.

5. Now set the steamer/ idly maker and allow it to steam. Meanwhile pack the flour mixture in a dry muslin cloth.

6. Once the steamer is ready steam cook the Flour mixture for about 15 minutes on a medium flame. At this point you can store the flour in an air tight container for 1 day and make it the next day too.

7. Meanwhile make the Jaggery syrup. In a pan add Palm Jaggery , 1/2 cup water and boil until jaggery is completely dissolved. Strain it keep it aside.

8. After the flour is steam cooked mix the mixture with a fork to make it lump free. Or, on the other hand you could sieve it too like I did in the video.

9. Now add salt, cardamom powder, coconut to the flour mixture and mix it well.

10. Add the prepared jaggery syrup in small additions and mix it with the flour mixture. The flour will come together like a dough. It took about 3/4 cup of jaggery syrup for me to get to that point. This may vary according to humidity level.

11. Now allow the mixture to rest of 10 minutes - 2 hours. This will help the mixture to absorb the syrup well.

12. Finally apply ghee in your palms and make kozhukattais/ Modaks and steam cook for at least 15 minutes or until the exterior is glossy and shiny. You could get help from kids like me.:P my 2 yr old helps me…:).

13. Now soft red rice sweet modak/ kozhukattai is ready to be served hot or store it in an air tight container.


Tips

1. You can use jaggery instead of palm jaggery too. Just use the same measurements.
2. Adjust the amount of jaggery if needed.
3. Just store it in an air tight container.
4. If the syrup is not sufficient use warm water for the rest.
