Peanut Chutney
Sweet and crunchy flavour of nuts when blended with spicy chilies gives the new dimension to the main course. Easy to make with just less ingredients.
This chutney recipe is very versatile one. You can use it as a chutney, or as a mix for rice, or even as a dip.
Ingredients Required:
Peanuts | 1 cup |
onion, sliced | 1 medium |
Green chilies, halved | 3-4 |
tamarind pod | Marble sized |
Oil | 1 tablespoon |
Salt | As needed |
For Tempering:
Mustard | 1 tsp |
Urad dal | 1 tsp |
Asafetida powder | 1 pinch |
Oil | 1 tablespoon |
Dry Red chilies | 1 |
Curry leaves | 1 sprig |
Directions
1. Dry roast the peanuts until light brown and deskin the nuts or buy dry roasted peanuts.
2. Heat oil in a pan and saute onion, chilies and tamarind until soft.
3. Allow the mixture to cool and grind the mixture along with peanuts in a blender. add few tsps of water if needed. Add salt to the mixture.
For Tempering
4. Add mustard, urad dal, red chilies, curry leaves and asafetida in hot oil and fry for a minute. Then pour over the tempering into the chutney and serve.
Tips
This chutney is good even without tempering. Mix the blended mixture to hot rice and serve. Its suitable for a lunch box menu as well.
